We practice the art of making handmade pasta an important Italian tradition. Anyone who has had the pleasure of eating handmade pasta can tell you, the difference from the packaged product is vast. Fresh Pasta give you a taste sensation offering a rich, flavorful, and savory vessel for sauces, oils and ingredients to rest upon.
We love it when our people visit our trattoria in Leiden wanting true Italian food, and they stand beside me while I prepare their pasta fresh for the evening.
This is what we feel is a signature dish, not a specific meal but that nearly everything we make is fresh and handmade.
